Support Local

We are all looking at how to reduce our carbon footprint and one way that we can do that is by supporting local. I am so happy that we are now producing lettuce, tomatoes and other vegetables right here in Ontario YEAR ROUND! This meal pictured above was made with 95% Canadian/Ontario products! This is a savoury fritter made with peas (Ontario) and with the Crosswinds Artisan Goat Chèvre in Herbes de Provence flavour (recipe to follow) with a roasted cherry tomato (Ontario), Olive Oil and Balsamic glaze with Basil (Ontario) chiffonade and salad with Ontario grown Spring mix lettuce, Ontario seedless cucumber and the dressing is Yummies In A Jar Black Currant Oil-free Dressing/Marinade. The amount of travel time is a fraction of what it takes to bring in produce from California or Mexico and we are creating jobs for Ontarians too! Yes, there may be a slightly higher price to pay at the grocery store but I am happy to pay that to encourage this trend. The Crosswinds Artisan Chèvre and the leftover roasted tomato mixture was FANTASTIC on a toasted Montrèal Style Woodfire Oven Bagel the next day for lunch! Here’s the recipe for the Fritters:

1 1/2 cups frozen Ontario peas, defrosted

1/3 cup of whole milk (Ontario

1/2 cup (Canadian) flour

2 tsp Baking Powder

Grated peel of 1/2 a lemon

1 large egg (Ontario)

1/3 cup of Crosswinds Artisan Chèvre

S & P to taste; Olive Oil for frying

Warm the peas in the non-stick fry pan that you will use to fry the fritters in. Combine the flour and BP along with the lemon peel. Stir together the egg, milk and cheese and add to the flour mixture along with the peas. Heat up your fry pan and cook the fritters in the Olive Oil adding additional oil as required. I made 10 fritters with the recipe.

Roasted Tomatoes:

I used a full package of the Ontario Cherry tomatoes, toss them in a mixture of 2 tbsp of Olive Oil and 2 tbsp of Balsamic Vinegar (I don’t measure really), salt & pepper. I put the tomato mixture in a small foil pan in my toaster oven up to a high heat (app 450 deg) and let them roast for a good 20 minutes or until they create a jammy sauce
