With all the excitement over the release of our two Michael’s this past weekend, it is understandable that a significant day of celebration was missed – National Mac & Cheese Day! This landmark day was actually on Sunday, September 26th but I really think that we could and should extend the celebration to take in the whole week because what is more comforting in these crazy times than warm, melty cheese over pasta?? Yes, there is the traditional M&C made with cheddar but when my store was on Water Street, a chef used to come in every so often and buy a big chunk of the Caramelized Onion Cheddar to make a gourmet M&C.....my mouth waters every time I think of that! And what about a bit of a fondue take using the Premier Cru Gruyère with a bit of Emmanthaler? I would rub the pot with a cut piece of garlic to get a hint of that taste and for sure finish off the dish with lots of buttered, toasted breadcrumbs. So let’s celebrate National Mac & Cheese Week at C’est Cheese Please!
